Seaham Coff-een

05/08/12, brew #5, Seaham Coff-een. The second brew of the day and my first attempt at a stout. Didn't have any oats or barley so went without but this doesn't seemed to have effected the end product. Lagging once again used throughout mash

12:10 - mash tun refilled with 4gal water and heat on

12:15 - 25°C

12:25 - 40°C

12:30 - 47°C

12:36 - 56°C

12:43 - 64°C

12:48 - 70°C

12:50 - 74°C, left to stand

12:53 - 73°C - Added 5kg pale malt, 300g chocolate malt and 345g black malt

13:03 - 64°C

13:10 - stir - 65°C

13:20 - heat on for 2min

13:27 - 65°C

13:30 - heat on for 2min

13:38 - stir - 67°C

13:48 - stir - 67°C

13:58 - stir - 67°C

14:15 - stir - 67°C

14:28 - end of mash. Liquid run off to 2nd bin, 12.5l. 

14:30 - sparged with 3 kettles of 67°C water, 17l post sparge, 20l post squeeze.

14:53 - back in boiler / mash tun, heat on - 58°C

15:06 - boiler actually plugged in!

15:24 - 66°C - thermostat knocked low turned back to 10

15:43 - 93°C

15:50 - boiling - Added 13g Citra (15% aa) [left over] and 53g Fuggles (4.2% aa)

16:20 - added 43g Fuggles

16:40 - added 43g Fuggles and 5g irish moss

Android 'Brewing Assistant' app makes this 65 IBU

16:50 - end of boil. Transferred via Pasta and fine sieve into fermentation bin, 17l

17:05 - added 2l strong caffitierre'ed coffee to bin and 1 kettle of boiling water to bring volume back to 20.5l

17:11 - wort cooler on - 78°C

17:14 - 70°C

17:22 - 47°C

17:28 - 37°C

17:31 - 28°C after stir

17:42 - water off, stirred - 23°C. New tube of White Labs English yeast WLP002 pitched

OG 1066 @ 23°C

Bottled 12/08/12

FG 1022 @ 22°C

Daves Dreaded ABV calculator makes that 5.8%

First taste of a bottle I took to my sisters is rather good. A sipper. A sweet taste. My sister says it just tastes of coffee but I think there is much more to it.

 
 
 

Intensely black beer. Strong earthy bitterness with dry, burnt & liquorice flavours. The Citra hops stand out too, livening up the taste in the mouth. Some alcohol heat generated in the throat also. Dials up to eleven on this one.

Just opened the second to last bottle to be consumed tonight and it has grown with age. Has a much bigger alcohol mouth feel now. I think I ought to try and replicate this brew soon.... in fact possibly this weekend. I have been going a bit mad recently but stocks have got very very low and Christmas is coming.

Interesting that you're getting so much "alcohol" mouth at only (!) 5.8%. I wouldn't have expected that.

Sounds like I'm missing out over there. I need to get back into it. Soon!
