Having not brewed an IPA in quite a while it was time again. Not wanting a heavy, authentically accurate India Pale Ale I've used American hops with a reputation for giving the tropical fruit flavour I love in IPAs. I've made it a low strength alcohol beer as I prefer the taste of beer to the effects of them on me, also to keep it light & quaffable.
Mash - 1 hour 10 mins starting at 68°C and dropping to 63°C at the end.
2 Kg pale malt
50g acid malt
100g crystal malt
Boil - 1 hour
60g El Dorado hops (14.8% alpha acid) 30 mins before end of boil
110g El Dorado hops 15 mins before end of boil
5g of Irish Moss added 10 mins before end of boil
Chilled using my wort chiller & splashed through 2 colanders - to aerate it - into the fermentation vessel containing Mangrove Jack's M44 US West Coast yeast & 100g of El Dorado as dry hops. The OG was 1.034 & PG at bottling of 1.010, which should give me a beer of 3.3% alcohol once the priming sugar has done it's job. 17 litres of wort were collected in the FV.
Bottled after 8 days at 18°C and 1 day at 11°C to help clear it.
